How to calculate % of projects assigned?

Hi there. I'm trying to setup a beast mode calculation but not sure the best approach for it.

I have a column that shows the number of days it takes for a new project to get assigned for example if opened on 19 Sep, assigned on 22 Sep - it would show up as 3 days.

I'm looking to do a quality check to see what percentage % of projects have been assigned within 10 business days. What would be the best way to go about doing this?
