Learning about Data Aggregators and Audience Data Monetization

Hello! I own a company which gathers demographic based consumer data regarding price perception of perishable foods and demand for perishable foods. I am very intrigued by the possibility of monetizing this data and I would greatly appreciate guidance with learning more about the subject. If you have any resources on the subject that you can point me to, I would be very thankful. Additionally I am curious what an average selling price for consumer data such as what I've mentioned would be. Thank you in advance!
